Tonight I finally forced the radish issue, making Radish Toasts, a simple appetizer found in Vegetables by James Peterson. James calls these an 'emergency hors d'oeuvre'. I was doubtful, but I must say they were delicious.
Radish Toasts
baguette, thinly sliced
butter, at room temperature
radishes, thinly sliced
salt and pepper
Lightly toast the baguette slices and lightly butter them. Arrange the radish slices on the toasts and top with salt and pepper.
The higher quality the ingredients the better on this one. Our radishes were wonderful, but the butter not so good. I recommend getting the best butter you can find.
