Box Contents March 26, 2008

This week's box includes:
  • Leeks
  • Spigariello Greens
  • Fennel
  • Winter Squash
  • Agretti
  • Chantenay Carrots
  • French Breakfast Radishes
For dinner tonight we're going to have Skillet Lasagna, adapted from the 24 Boxes blog recipe of the same name. (If you have not seen it, this is a great site.) Since I'm vegetarian, eating vegan whenever possible, we'll forgo the milk and the meat in favor of extra vegetables. I'm going to include the spring garlic (from last week), spigariello greens, and an eggplant we have on hand. Since agretti is completely new to us, we'll likely try it straight up, sauteed with a bit of olive oil, salt and pepper. The carrots will become Baked Carrot Fries for sure and the radishes eaten raw with salt. I have no idea what we'll do with the squash and fennel.
